Gilbert Fetaz is the Executive Chef at Piero’s Restaurant and has been here since it opened in 1982. His philosophy on food is that it should be tested, very fresh, simple and consistent. The food should speak for itself. This is what keeps guests coming back to Piero’s. Gilbert hails from France where he was taught the culinary arts. He moved to Canada, the Bahamas, Bermuda, Florida and then Chicago.
Paul Anka, the famous singer and entertainer, visited the restaurant in Chicago and was so impressed with Chef Fetaz’s talent that he bought and opened a nightclub in Las Vegas and moved him to the state. This club, Jubilation was extremely popular and well received. When Piero’s was in the planning stages, he was hired and has been at the restaurant ever since.
Gilbert has cooked for many celebrities, politicians and famous sports figures. He loves to travel and is extremely pleased when customers return to the restaurant. He feels they appreciate and enjoy the quality of his food and the simplicity of its clean preparation.
